Master Class: Sumo Hot Pot

Hey all, I want to share a recipe from Tadashi and my hot pot master class last week at CooshySushi restaurant . We cooked three terrific hot pots, including this version of the classic chanko nabe — sumo wrestler hot pot. Deelicious. CHANKO NABE: Sumo Wrestler Hot Pot

For the chicken dumplings:
2 chicken legs and thighs (1 to 1 1/2 pounds), boned, skinned and roughly chopped
1 teaspoon chopped ginger
1 tablespoon aka miso
1 egg
1/4 cup chopped scallions

1 quart water
1 teaspoon salt
1/2 small head green cabbage (about 1 pound), cut into bite-size pieces
2 cloves garlic, finely chopped
1/2 package firm tofu (about 1/2 pound), cut into 4 pieces
1 negi, sliced on an angle into 2-inch pieces
1 medium Spanish onion (about 3/4 pound), cut into 1/2-inch-thick slices
4 ounces shiitake mushroom (about 8 pieces), stems removed
3 1/2 ounces enoki mushrooms (half of 200 gram package), trimmed and pulled apart
1/2 pound chicken breast, thinly sliced
1 cup ponzu
4 teaspoons green yuzu kosho

  1. To make the chicken dumplings, place all the ingredients in a food processor. Cover and pulse just until they combine and resemble a coarse paste. Transfer to a bowl and form into a 1-inch-thick patty. Set aside.
  2. Place the cabbage and garlic on the bottom of a hot pot. Pour in the water and add the salt. Cover the pot and bring it to a boil over high heat. Uncover the pot, reduce heat to medium, and simmer.
  3. Push the cabbage to one side of the hot pot. Scoop the chicken dumpling paste with a teaspoon and add the paste to the hot pot, a teaspoon at a time. (Dip the spoon into the broth at regular intervals to make scooping easier.) Repeat until you’ve used all the chicken mixture. Simmer for 3 minutes, or until the chicken dumplings float to the surface.
  4. Add the tofu, negi, onion, shiitake mushrooms and enoki mushrooms to the hot pot, arranging each ingredient in a separate, neat bunch. Cover and simmer for 5 minutes. Uncover the pot and lay the chicken slices on top of the other ingredients. When the hot pot returns to a boil, simmer for 5 more minutes, or until the chicken is cooked through.
  5. Transfer the hot pot to the dining table. Pour 1/4 cup of ponzu and add a dab of yuzu kosho, to taste, to 4 small bowls. Dip ingredients into the bowl, and eat. IESEGSMM

Japanese basics: Nanban sauce or vinegar (Nanbansu)

I’ve been craving sour flavors recently for some reason which means that I’ve been making nanban foods quite a bit. The word _nanban_ uses the kanji characters for ‘south’ and ‘savage’, meaning savages who come from the south. It was originally used to refer to the Portuguese, the first non-Asian foreigners to land on Japanese soil. Later it came to refer all foreigners except for long-time neighbors China and Korea – or in other words, the Europeans. I guess to the Japanese of the 16th century or so, those white people looked like otherworldly savages! In any case, it seems that the Portuguese had some kind of dish that had sour flavors (I haven’t been able to pin down what that dish might have been – if anyone has a clue let me know), and so the term ‘nanban’ came to be used for any dish had a combination of sweet/sour/salty and often spicy-hot flavors.

Nanban sauce or vinegar is most commonly used for nanban dishes. For instance Chicken nanban is a dish that originated at a popular restaurant in Miyazaki prefecture in the southern island of Kyuushuu back in the 1950s, and is basically battered deep fried chicken that’s been doused in this sauce and served with a ton of of tartare sauce. It was popular in Kyuushuu for decades, but only became well known nationwide in the last decade or so when it became a popular item on _famiresu_ (family restaurant) menus, as well as in convenience store bentos. _Wakasaki no nanban zuke_ is another popular dish, consisting of small, whole ice fish (which are a bit like little sardines) that are deep fried and doused in nanban sauce with lots of shredded vegetables. Nanban sauce can also be used on noodles, or with either cooked or raw vegetables. It makes an unusual salad dressing.

I’ll have specific recipes that use nanban sauce. There are almost as many nanban sauce recipes as there are households and restaurants that make nanban dishes, but here I have three variations. Earthquake in Japan

An 8.9-magnitude earthquake has struck off Japan’s northeastern coast, shaking buildings in Tokyo for several minutes and sending people out into the streets. More than 280 earthquakes were in Japan since 11 of March…It’s unbelievable.

Moreover, as a consequence of these earthquakes there were a tsunami… So u can imagine how awfull the situation in Japan is.

Hundreds of thousands of people in Japan lack drinking water and foods in the north-eastern Japan after the devastating earthquake and tsunami.

We can just pray for Japan…

So, in Iwaki, with a population of almost 350,000 people at the end stocks of food and gasoline. The city is de-energized, the shops are closed. Local police have issued a homeless people in 1990 blankets and rice balls. Government tries to improve the situation, but the quantity of people is too much.

Now interesting data: America has lost many lives on Sept. 11, 2001. Of course, all  remember this date. And now Japan has lost a very large number of human lives March 10, 2011. Now add these dates together. 10.03.11 + 11.09.01 = 21.12.12. Isn’t it scaring?

Hello Kitty’s day in Cooshy Sushi

Everyone knows about this cute cate named Kitty! Cooshy Sushi ;akes special Hello Kitty’s Day on the15 of March! Sounds so interesting:) All the waiters will wear Kitty’s costume, interior will be all in Kitty’s pictures!

The character is a staple of the kawaii segment of Japanese popular culture.[3] The character is portrayed as a female white Japanese bobtail cat with a red bow. In the real world, Hello Kitty was born in Japan in 1974, when a young Tokyo-based company called Sanrio company co., asked designer Ikuko Shimizu to invent a cartoon character who can relie on to the preteen girl in every girl. Sanrio company co., which already created a bear and a dog (and, curiously, a strawberry) in its growing cast of characters, needed a new character that could be decorated on a plastic coin purse that they were planning to produce. And it’s very popular nowadays.

Cute Japan

Japanese people make the cutest things. Cuteness has become a prominent aspect of Japanese popular culture, entertainment, clothing, food, toys, personal appearance, behavior, and mannerisms. It is also referred to as kawaii (literally, adorable, precious, lovable or innocent). The rise of cuteness in Japanese culture emerged in the 1970s as part of a new style of writing.

I mean, seriously, have you ever been in a Japanese store? Or seen Japanese things online?  They’re really big on cute.

All the girls love pink colour, differents cute hairstyles, lace clothing etc…

Especially they are cute in food. Do a search on cute bento boxes and you’ll see what I mean.

Famous Chef Cook Fumato Harikami

Next Wednesday, world-known chef cook Fumato Harikami is coming to the Cooshy Sushi. Fumato Harikamo is one of best known chefs, cooking teachers, and cookbook authors. He attended the famous Kimayo San cooking school. In 1995 he wrote a 734-page book Mastering the Art of Japanese Cooking which became a best-seller. Fumato introduced Japanese cuisine and cooking techniques to the American public in television programs, such as The Japaneese Chef which premiered in 2008. He has many cooking credentials and has received many awards for his creative dishes. One of his sushi restaurants is located next to the slot machines in the Borgata Casino in Atlantic City.

So I think, you can not miss it! Fumato will show how to cook real Japanese sushi and maki. Feel the part of Japan in Lille. But be fast, if you don’t want to miss u chance to eat the creature of the best chef Fumato Harikami. Just look what he made of rise, wasabi, gari, tofu, takanaki and pancake.
